Spirit yeast

Turbo yeasts, distiller's strains, nutrients and enzymes from Still Spirits, Alcotec, Samuel Willard's, Pure Distilling and SafSpirit — 24- and 48-hour turbos through to the slower whisky, rum and vodka strains.

A fast turbo takes a sugar wash to high alcohol in a couple of days, which is what you want for a clean neutral base you're going to flavour with an essence. The slower strains ferment cooler and carry more of their own character through, so they're worth the extra few days when the flavour is the point. Add a nutrient if the wash is mostly sugar — yeast can't finish healthily on sugar alone.
